- Cultures for Bio-Protection, the Future of Winemaking, presented by Anne-Claire and Karen Olks of Chr. Hansen. Learn how wineries are utilizing beneficial yeast and bacteria proactively for the control of spoilage organisms, such as Brettanomyces, and the reduction of sulfur dioxide.
